As per sacred legends, King Mandhata of Lord Ram’s lineage was a devoted worshipper of Lord Shiva. He used to regularly visit Kedarnath and offer khichdi (a rice-lentil dish) to the Lord. Following Shiva's divine instruction, he also performed intense penance in Varanasi. Pleased with his devotion, Lord Shiva manifested from the khichdi as a Shivling, now known as Gauri Kedhareshwar.
This unique Shivling in Kashi is composed of two parts, symbolizing Hari-Har (the union of Vishnu and Shiva). It is believed that this Shivling holds the presence of Gauri (Parvati), Kedhareshwar (Shiva), Mahavishnu, Mahalaxmi, and also Goddess Annapurna, since it emerged from food (khichdi).
